The cellars of the domain are located just behind the church of Chassagne-Montrachet. They are embedded in the hill of Clos Saint-Jean. Long vaulted galleries made of Burgundy stone watch over the oak barrels. This wood is adapted to the structure of Burgundy wines which can thus express all their specificities. It is the place where all the red and white wines are vinified and aged, and it is ideal for aging in barrels because the temperature is quite stable, between 12° and 14°C, and the humidity is close to 80%.
